So you defrosted it, cooked something with it, and now want to freeze it again.

I wouldn't. I always thought that you shouldn't.

But then a friend (who seems to be quite foodie) was amazed when I said something similar re. minced beef. She says she does it all the time!

from fresh it is fine to:

freeze
thaw
cook
freeze
warm.

in that order. no other bits inbetween and it'll be fine.

e.g. fresh mince, freeze, cook into chilli, freeze into batches, warm for quick meal :-D
