Have you got a can of tomatoes, some sultanas and some cinnamon? You can make the easiest peasiest chickpea tagine if so. Ditto curry if you have an onion, some curry powder and tin of toms.

Add a pinch of cumin, a bit of squeezed lemon and olive oil. Chuck in some finely chopped cucumbr, tomato and onion. Mix it all up and chill it for as long as you can hold out. Serve it with meat or just crusty bread. It's lovely

Hummus.

Blend chick peas, lemon, garlic, salt, paprika, parsley, olive oil.

Add tahini (sesame seed paste) if you really want authenticity.

Dip in cucumber, carrots, peppers and bread cut up in chunks.

There are lots of reciped for it on the web but really I tend to adjust the ingredients to taste.
