Bakers! White chocolate fudge icing recipe?

Am in the process of making a chocolate fudge cake for my son's birthday but would like to cover it with white icing, rather than a chocolate covered one. The recipe I'm working from uses this chocolate icing for the frosting:

  • 200g bar of Cadbury Bournville chocolate
  • 40ml (2 tbs) Cadbury Bournville cocoa
  • 142 ml (1/4 pint) double cream
Melt the chocolate carefully. Make the cocoa into a paste with water as before and mix with the chocolate. Slowly whisk the cream into the chocolate until smooth and thickened. Spread the frosting evenly over the cake with a palette knife

I was thinking of just substituting the dark choclate for white, and leaving out the cocoa paste. The above frosting gave a really nice smooth finish when it dried. Do you think what I suggest will work ok or do you have another fabulous idea for me?

I'm no baker but I do have a recipe for white chocolate frosting, which won't give you a smooth glossy finish but roughed up and with choc curls on top, looks fab.

Prob not the finish you'er aiming for though...

Sorry, didn't get back to this in time. Tried the 'fudge' icing without the cocoa paste - was an unmitigated disaster - far too runny despite vigorous whisking and just disappeard into the cake. Ended up covering it with sugarpaste icing which worked out fine.

Would love your recipe for next time though! (if there is a next time, the air turned blue several times during the decoration phase of this one).
