icing frozen cake - please hold my hand through this!

I am new to cake making - please would a kind Mumsnetter come and help!?

Have made trial run cake and all seems ok so far so am hoping to not have to do another one, but DS birthday is not until a week tomorrow.

Can you put the following steps in the right order and tell me when I should do each bit so that it's ready for next Friday for me please?

  • cut cake into pattern
  • freeze cake
  • ice cake
  • store cake ready for eating / defrost cake

Stupid questions:

  • can I ice it now and then freeze it?
  • Can I refreeze it once iced?
  • assuming I can't do either of those, how long will it keep and where do I keep it once it's iced?

  1. Cut cake into main shapes
  2. Freeze (first wrap in greaseproof paper then tightly in 2 or 3 layers of clingfilm to prevent freezer burn or it drying out.
  3. Carve
  4. Ice - it will defrost while you ice it
  5. store/ eat

Do NOT freeze it when it is iced, it will spoil.

How long it keeps depends on the type of cake and icing you use. Give us some details.
