Gladly!!

Chop onions and fry gently until transparent.
Take out of pan.
Chop carrots roughly and fry for 3-4 mins in the same pan adding a tiny bit of butter, keep stirring every 20 secs or so.
Take off the heat.
Throw in heaped spoon of flour and stir into carrots.
Dribble in some boiling water, stirring all the time to avoid lumps. The water and flour will make a paste, and will get thinner the more water you add.
Chuck everything into a casserole dish (carrots/flour mix, onions, lamb, herbs), top up with stock to cover it. Stick it in the oven.

Then, peel spuds and chop, and cook swede. Boil spuds and mash with the swede, a big nob of butter and some black pepper and salt.

Voilá don't forget the wine

oh, and add chopped garlic with the onions if you like, or better still peel but don't chop, and add at the carrot stage

Hope you enjoy it! I sometimes put a glug of red wine in the casserole halfway through cooking to rich up the gravy a bit too.
