what to serve with herb crusted rack of lamb?

I'm cooking for the inlaws over the weekend. What is nice with rack of lamb? Potatos of some kind? Or cous cous? Lamb is quite herby so don't want to overkill with the flavours.

Appreciate any ideas, all veg possible and liked in this hous.

Butter bean salad? Rice with wild rice? Couscous would be good too. And then just some nice spring greens with butter [drooling emoticon]

Sweet potatoes. I do a similar dish and always serve with sweet potatoes mashed with goats cheese and coriander, plus a bit of pepper and lemon juice. Yum.

I like to serve mashed potatoe and green veggies - normally beans - with roast lamb. You want the potatoe for starch and to soak up yummy juices, and the green veggies are lighter which goes well.

The sweet potatoe version sounds nice too.

I'd be tempted to go all spring-like and traditional and go for new potatoes, green beans and fresh peas.
