I have lots of coconut milk but don't like Thai curry - ideas?

I bought some coconut milk (in a tin) to make a dessert but still have lots left. I don't like Thai curry because don't like spicy food.

Any ideas? Thanks.

you can make thai curry but not too spicy!

use it in a rice pudding, that's nice

Tell me, is the tinned stuff just the same as the proper stuff straight from the coconut? Cos if it is, my idea for you would be to drink it.

I have made some coconut rice tonight for tea. Can I make more and freeze it?

I actually have pudding rice so that could be a good idea about rice pudding - any recipes?

I have no idea how to make Thai curry, or any curry. I have only had chicken korma before but I buy a jar because I am so spicy food illiterate.

The most lovely thing you can do it blend it with a mango or 2 and freeze then eat....heaven!

Mango thingy sounds yummy too. So desserts seem to be the way to go, was hoping for more main meal stuff but I bought it for dessert (coconut ice cream - was nice but too rice) so I suppose it is more desserty.

for coconut rice pudding just substitute some of the milk for the coconut milk. I think I usually do half and half, but it doesn't really matter

Make pancakes and use coconut milk in the batter rather than normal milk - yummy
