Recipe using chicken thighs and chorizo for 9 people- any ideas?

Has anyone got a good recipe using chicken thighs? I was thinking of a casserole type meal.

Recently I ate a delicious meal in a restaurant
which was chicken and chorizo, and possibly red pepper. It was served with an olive and potato mash. If anyone knows how I could cook something similiar that would be great.

If not any other recipes would be welcome.

I'd fry up some onions, garlic and peppers. Add some paprika, then sliced chorizo and thinghs. Couple of tines of tomato over, season liberally and simmer for an hour or so.

Pretty much what moondog says. I make that a lot - it's lovely.

Soften onions, garlic, pepper (yellow and red)

Put in a casserole dish. On top put the chicken, sliced chorizio, few sliced mushrooms, tin chopped tomatoes, some olives and a sprinkle of herbs.

Bake in the oven and then I put some grated cheese on top and let it bubble before serving.

Or you could make paella, throw in some prawns if you have them, loads of peppers etc

Delia's a bit of pain but her recipes always seem to turn out well, so I'll try her Chicken Basque. I'm sure Moondog and Tsar's recipes are lovely too though.

Tiger, like the paella idea too, but I need something I can just put in the oven and leave to cook.

Do you reckon the olive and potato mash, would need any other ingredients in it other than the obvious?

I'd have thought so. Freezing might even improve the taste.
