Left some drained veg in a pan overnight - ok to freeze today?

I left some sweet potato and apple that I'd been cooking to batch freeze, in a pan to cool and forgot about it. Is it ok to freeze today? TIA

Was it covered overnight?
If it still looks and tastes ok I'd probably still freeze it but if it looks a bit mangey or dry I'd chuck it.

(I do stuff like this so often!)

Hi, thanks for your reply, it was almost covered, I had left the lid a bit off to help it cool IYSWIM. Tasted ok.
