Give me some ideas to use up my couscous

I am particularly after a good cold couscous type salsa recipe, but I'd like some others too if you have any.

I forgot the please and I meant salad, not salsa.

Couscous is great with hot or cold roasted veg (aubergine, courgette, squash) and chunks of goats' cheese with lettuce. Or you could go a bit more authentic and add raisins, sour cherries, flaked almonds and pomegranite seeds.

I used to live on couscous at university made with a pinch of Marigold powder in the boiling water, then mixed with halved cherry tomatoes and finely chopped spring onions, which is also quite nice.

I like it with olives, sun-dried tomatoes and mixed peppers, served with hummus.
