I made a big pot of vegetable and barley soup earlier, but the barley has now soaked up all the liquid and is swollen to gargantuan proportions.

Any tips on how to rescue it? Should I just add some water when I reheat it?

How are you meant to keep soup with barley in it?

I would add some veg stock (stock cube and water) to thin it down slightly.

Keep it in the fridge?

Thanks bella It's in the fridge, but i was hoping there might be some clever technique to stop the barley sucking up all the liquid in future batches of soup!

The recipe did call for A LOT of barley (a cupful??!!). Will definitely add less next time. Thanks!

Although it was perfect when first cooked. Am unlikely to ever consume several litres of soup in one sitting though, so will have to adjust it so that it stores better.
