Salad dressings. What's your favourite?

I have salad tonight with a peice of fish and wondered what salad dressing to use?

What's your favorite salad dressing?

Last question I have Japanese Rice vinegar in the cupboard, can this be used as part of a dressing?

I love the Wagamama salad dressing, which does use rice vinegar:

2 tsp finely chopped shallot (though I spring onions, or normal onions if that's what I've got!)
1 inch piece ginger, peeled and grated
1 small garlic clove, peeled and finely chopped
1 and 1/2 tbsp rice vinegar
1 tbsp tomato ketchup
1 tbsp water
100mLs veg oil
3 tbsp light soy sauce.
Whisk all together in bowl or shake together in screwtop jar. Will keep in fridge for few days.

Love this on salad, and am sure it would go well with fish, but I've also used it as a quick/ easy/ desperate pasta sauce, stirred into noodles, to dress a plain bowl of lentils etc!

I like just Aspall's apple balsamic vinegar on it's own.

I use Rice vinegar in carrot salad, just grated carrot, walnut oil, rice vinegar and walnut pieces.

I love olive oil and salt and pepper on its own esp with fish
