Ok, here's one.

Get a leg of lamb.
Fry onions in pan, when softened add uncooked rice and garlic. Fry until rice is translucent (1 or 2mins). Add 150ml of chicken stock, thyme and mint. Bring to boil then turn down heat and cover for 20mins or until rice has soaked up all the water.
Let it cool.
Open up the leg of lamb so it's spread out like a butterfly. Put rice mixture in and roll it up like a swiss roll. Secure with those metal skewer things or with string - whatever.
Cook at 190°c for 1,1/2 to 2 hours.

Serve with mash or roasties and veg.

We had it yesterday and it's bloody gorgeous!

That souns lovely Rhubarb, i haven't got that long though but i will deffinatley save this thread to try that in the week.

Im after something that i can bring to the table in the dish, i made a huge Pasta Bake with dishes of buttered veg and thick crusty bread it was divine.

I might go for Sausages if my butcher is open becuase he does really nice Wild Boar and Apple sausages, If the kids wernt eating with us i would do a chilli or a curry or big juicy steak!
