I would cook it just by boiling (with onion/ carrot/ celery/ peppercorns etc thrown into the water), and then use the meat to do straightforward meat/ potatoes/ veg dinner, pasta with ham and peas in a creamy sauce, stirred into a risotto, make a pie the possibilities are endless! - and use the leftover stock to make pea soup.

Sorry, punctuation there a bit variable!

Oh yum. It needs long slow cooking or it'll be tough.

Put it in a big pot, cover with beer or red wine. Add bayleaf, rosemary, a little chopped onion, maybe garlic. Put it in a low/med oven for a long time (I give it 6hrs or so, and then it's falling off the bone and utterly delicious). To thicken it you can dissolve some flour/butter mixture in. You can put spuds in with it too, but I usually do mash and peas separately.

Thanks ladies! Jux, my mouth is watering at that, sounds delicious. Think the beer/wine gives it the edge
