Your best lamb curry recipe please - must be authentic

I want a lovely lamb curry for this weekend as have a curry lover coming for dinner - any ideas please? thanks

Here is a beauty HERE It's gorgeous!

It is quite hot but if you want it hotter, just keep tasting it and add more spices as you like. If you do it too hot, you can always use more yoghurt at the end to cool it.

Instead of cooking it in a pot, I do it in a big casserole dish and oven cook it for 1 and a half to 2 hours and the lamb goes SO soft and flaky - mmmmmm

Surprised at the coconut milk though with lamb?

the lamb needs to have bones in it, otherwise the sauce wont taste as good.

fry some onions. add salt and garlic ginger, turmeric, cumin, coriander, garam masala and chilli powder. ( dont ask me how much, a teaspoon each? or less? or more? ) add lamb, cook it round for a bit. cover andsimmer on low heat till not quite done. then add, either tomatos, or plain yoghurt. cook on higher heat, with lid off, stirring continuously ish, till tomatos done. or tennish minutes or less with youghurt. feel free to add green coriander leaves and put the lid on, with heat off at this point, and let it just sit.
also, something about th eoil and water separating, then tis done.

sorry, i dont do recipes. i just sort of cook it. its different every time, but not had any complaints, except from not so dh. serve with either rice, or naan, or pitta
