What are the bases of your fav sauces?

e.g. my fav stir fry:

3 tbsp groundnut oil heated and in it frizzle:
2 star anise
2 cloves garlic crushed
2 tsp grated root ginger
chopped chillis

then just before end add:

5 tbsp soy sauce
3 tbsp balsamic vinegar
chopped flat leaf parsely
dried tarragon

Onions and garlic. The basis for most things I cook!

Sausage casserole sauce -
onions, carrots, garlic, paprika, grain mustard, honey, loads of black pepper, chilli flakes, passata. Cook then bung in veggie hotdog sausages, tin of butter or cannelini beans and some chopped red pepper and cook for five minutes or so.
