I don't SUPPOSE anyone's got the recipe for Gordon Ramsay's beef casserole thing from his Sunday lunch book have they??????

I had this at a friend's house last month and it was scrrrrrrrumtious but it wasn't her book and she's had to give it back. Dh wants to cook it for mother's day now. I could improvise it, but would love to know the proper timing and ingredients as the beef was so tender and it was cookedfor hours, apparently.

would be very grateful!

800g braising beef
3tbsp plain flour
seasoning
olive oil
200g smoked bacon lardons
2 carrots
1 small celeriac
150g baby shallots
thyme
2 bay leaves
250g chestnut mushrooms
1tsp tomato puree
5ooml red wine
300 ml beef stock
flat leaf parsley

How good are you at cooking? do I need to do full recipe or will you get the inbetween bits if I dont write it down completely??

GOsh that's brilliant! thanks so much. Will be fine at improvising the putting-together, but Could you just give me the temp and time spent in the oven?

150 degrees or Gas 2

Sear beef in 2 or 3 batches (covered in flour and cooked in oil) Set aside

Add lardons to pan and fry. Cut celeriac and carrots into 2cm and tip into pan with onions, thyme and bay and stir til veggies start to soften. Stir in mushrooms and tom puree for 2-3 mins

Pour in redwine and scrape bottom of pan to deglaze. Add stock and bring to boil, simmer for few mins. Return beef to casserole and immerse meat into liquid. Lid on and cook for 2 and a half hours!

Check seasoning and add parsley.

Serve with mash and cabbage
