In my veg box this week I have . . .

fennel! Haven't a clue what to do with it. Also have white cabbage, two green peppers (which I don't really like), some tomatoes, and the normal potatoes, carrots and onions.
Normally, my children help with the menu planning, but I think this might be a bit too challenging, even for them! (They are four and five).
Any suggestions, gratefully received!

fennel and lemon goes together well.

I had a red cabbage in mine!

celeriac can be mashed with potato or roasted with potatoes, parsnip, carrot, onion, tomatoes, fennel, balsamic vinegar and honey.

Peel and cut celeriac into Julienne strips, gently fry with knob butter 10 mins, add tsp Dijon mustard, tsp vinegar, salt, pepper, cook another few mins, add chopped parsley and serve. Should still have little "bite".

Jerusalem artichokes make a lovely puree - I make mine with a little curry powder and some cream. But they really, really make you fart. Huge smelly ones. You have been warned.
