gujarati style potato curry?

Fry some cumin and mustard seeds in a little oil, add the potatoes and toss well to coat. Then add enough hot water to nearly cover, one diced tomato and spiices - 1/2 tsp turmeric, tsp chilli, tsp cumin and tsp ground coriander, salt and sugar. Simple and delicious.

Wash the pots.

Get a pan, heat a couple of tablespoons of veg oil, adda teaspoon of cumin seeds, when they start to 'pop', add a chopped onion, cook for a couple of mins, stirring frequently.

Add the cold pots, chopped up if large into 2cm cubes, then stir in salt, tumeric if you've got it, chilli, add a touch of water if they start to stick, cover and cook until warmed through, finish with some ground cumin and coriander, stir and cook for a minute or so longer, serve, garnished with fresh chopped coriander. Very Yum!

Snap with Chops! Mine is gujerati style with onions, no toms.

If no cumin and coriander, what about this (My dad used to make it for us as a snmack as klids and it is seriously delish:

Heat pots in microwave, mash very roughly with a fork, dress with oil (veg or olive) chilli powder, salt and lemon, eat as a starter/side dish.
