Leftover roast pork in a pasta sauce?

I have a big piece of leftover roast pork, from Sunday. Would it work to just dice it up and bung it in a pasta sauce? (with tomato and mushroom, probably?)

That would work.

Or if you fancy something a bit spicy,
I've made something similar to this before. It's a kind of coconutty curry.

I think it's very important with pork to make sure it's reheated properly so that it's piping hot throughout.

Sounds lovely. I usually stir-fry it with noodles and soy sauce.

Well, I normally leave pasta sauce simmering for ages, so the pork will deffo be heated all the way through. Presumably, if I leave it simmering, it will be soft, and break apart, but that's good, I think.

Thanks, guys. We don't normally have leftover roast pork, normally it just all gets eaten, but there really was too much last night.

I make Nasi Goreng with leftover roast pork (bit like a biriani).
