Butternut Squash?

I've been really adventurous and bought a butternut squash for my 20 month old!!

Now what? All I seem to find is that you roast it in oil, which is fine. But I was hoping for more of a 'meal' with it. Anyone any ideas?

Right chaps, I've turned into a butternut squash and sweet potato junky.

Roasted them all up with carrots and swede, which were scrummy, buy no variety in colour as that was all we had to go with our meat, presentation was a bit 'bland' but tasted lovely.

Last night I did Keepingmums' Veg lasagne - with added brocolli (sp?)for colour! and that went down an absoulute treat. OK I cheated abit - used tinned tomatoes with added garlic and a packet cheese sauce (I'm letting the side down arn't I?) but it was really really tasty. Cheers.

I made the veg lasagne for friends and they loved it. Thank god I made an extra one to freeze as dh has been scoffing it every opportunity he can get.

I need to do some cooking for ds and am going to try the other recipe here as it sounds delicious.

You can peel, dice and microwave butternut squash. Normal toddler portion would take about 1-2 mins. Brought ds up on the stuff and he still loves it aged 5.
Thanks Tetley for the recipe. Sounds great, and vaguely weightwatcher-ish. Well, that's my excuse for trying it!

For babies, a fave of my dd when she was little was mashed butternut squash with creme fraiche (sp?) and grated cheeese. Yum. I quite liked it too...
