How can I make a new dinner out of cold roast chicken and roast new potatoes?

We had a lovely roast last night with loads left over. I suppose I could just reheat the potatoes but wondered if there was something more interesting I could do. Chicken and pots makes me think of stew but I'm not sure if it would work with already-cooked chicken.

Any ideas for how I can make something interesting? I have most of your average storecupboard staples and a few veg.

Curry with curry paste and tomato puree and any veggies hanging around, the curry shreds and is virtually the only way my kids will eat it. Serve with rice.

I meant that the chicken shreds, not the curry. That's what we've all polished off tonight.

mmm like the idea of the curry... They all sound nice. Haven't really made soup before - how would you do it? I still have the bones so could do stock.

too late for tonight but what about a Spanish omelette/tortilla (?) type dish - pots and chopped chicken / herbs / frozen peas / sweetcorn / any veg, beaten eggs and cook in oven and brown under the grill.

good with green salad and chopped red pepper.

tonight we are having a quiche made from Sunday's roast chicken leftovers and a sliced camembert (i found it in the freezer left over from christmas) with some thyme (all in the quiche i mean). 3 eggs and some parmesan on top et voila.

v. hungry now...

yummy chicken leftovers salad: shred chicken, add to lettuce, tomatoes, chunks of roast potato, mayonaise, lemon juice, black pepper and crushed plain dorritos. perfect for summer (if that ever comes)

Mix the potatoes and chicken with mayonnaise and tomatoes/sundried tomato and some fresh green herbs. Serve with salad.
