am making these for DS birthday next week and it must be simple (ie no lemon zesting) and good please, just a simple vanilla cake...

eggs, sugar, sr flour, marg,

weigh your eggs (quantity dependent on how many cupcakes you want to make - 2 will make a dozen or so)

weigh out the weight of the eggs in marg and sugar (I use granulated but caster usually recommended) cream these together.

beat eggs and mix in - add tsp vanilla essence and mix in

weigh out flour same weight - fold in to mix - I add a tsp of baking powder at this point too.

spoon into buncases in a bun tin. bake 15 mins or so 180 C

for easy butter icing cream double weight of icing sugar with weight of butter - ie 4oz butter, 8oz icing sugar. can use cocoa, orange juice etc to flavour.

4oz caster sugar
4oz butter
4oz self-raising flour
(If your self-raising flour isn't new or you are feeling paranoid then add 1tsp baking powder as well (I've taken to always adding it to make sure they rise properly))
2 eggs, lightly beaten.
dash of vanilla

Cream sugar, butter and vanilla together until light and fluffy. Gradually add eggs, beating constantly. Add flour (and baking powder if using) and mix in.

Put into paper cases -- makes 12 cupcakes.

Cook at 180 C or so for 12-15 minutes.

As per PortAndLemons recipe but if you've got a food processor you can just bung all the ingredients in at once and whizz. Then I add a couple of tablespoons of milk to make the mixture a bit runnier. Maybe not the lightest cupcakes in the world but regularly get compliments and definitely good enough for a children's birthday party.

Same as pandaG but no yolks- makes very light and fluffy cakes.

I always put a bit more baking powder in if I'm doing them in the food processor.

I make mine in muffin cases so they are nice and big (cup cakes rather than fairy cakes if you see what I mean) and I use 6oz sr flour, 6oz soft margerine 6 oz caster sugar and 4 eggs. Baking powder if I'm feeling paranoid, bit more baking powder if in the food processor. Makes 12 muffin sized cakes.

AND DON'T FORGET THE GLITTER WHEN YOU'RE DECORATING! Vanilla butter icing, a Minstrel plonked on the top and a sprinkle of gold glitter. Beautiful.

Add some butttermilk to the recipe, makes them lovely and moist (or yoghurt, can used flavoured ones if you like).

I use an electric balloon whisk and whisk the batter until it is about 2-3 times the original volume, white icing and sprinkles, or white icing with a single red m and m for red nose day cakes

When you say fod processor, do you think I could use one of these. I do my pancake/yorkshire mix in it and it's fab. or what about one of these.

Dammit, typing is so rubbish today. Food processor, not fod processor, though fad procoessor I quite like the idea of if we're considering all vowel problems.
