What to do with a surfeit of mushrooms?

I am not inspired and I have nearly a whole kilo of mushrooms to use up (DH went shopping ). What can I do that is interesting and easy and is not risotto?

i really like them just fried with garlic on toast. hmm that could be lunch.

Does mushroom soup freeze well? A kilo is a lot of mushrooms...

Garlic mushrooms on toast for dinner tonight then.

I really like them fried with a bit of cayenne and worcester sauce and then dumped on top of cheese on toast - yum, could eat that every day! (which is why mushrooms don't last very long in my house!)

You will find once you cook them that they lose a lot of moisture, so a kilo isn't that much.

Mushroom sauce for pasta would be good - finely chopped onion and garlic, fried gently till soft. Add chopped mushrooms, some tarragon, season and cook till moisture has disappeared. Then add a spoonful of tomato puree and some double cream.

I haven't tested that recipe, I just googled for one in English because I'm not sure how well known the dish is out of France.

It is one of DH's favourite meals.

Dry (after cleaning the mushrooms), on a wire rack in an airy warm place - greenhouse / airing cupboard. Check frequently for mould. It's hard to dry them thoroughly this time of year, but you can semi-dry then freeze.
