wanted to share the best cheesecake recipe in the world

it would be too mean to keep it to myself. I made it for the first time on Friday and it was so good I made another one yesterday. Both have been polished off
Lemon Cheesecake

Ingredients
Base

8 oz Digestive Biscuits
3oz Butter
1 oz Sugar

Topping

1 pkt lime or lemon Jelly
6oz cup boiling water
8 oz Philadelphia Cheese (I used philly light and it worked just as well)
4 oz Caster Sugar
Half pint whipping cream
3 tblspoons lemon juice

Method
Base

Crush biscuits by hand (if you use a food processor, the biscuits become too fine resulting in a very hard base).
Melt butter and sugar and add biscuits.
Press base into loose bottomed greased tin.

Topping
Disolve jelly in boiling water. Add lemon juice and allow to cool.
Whip cream until standing in peaks.
In separate bowl mix cream cheese and sugar together.
Add cooled jelly gradually to cheese and mix well.
Carefully fold in whipped cream.
Pour on base and leave to chill overnight (can do this quicker in freezer in a pudding emergency)

Scoff.

Umm, don't want to be cheeky, but I'd say I have a rival recipe here. A Mnetter called tipex gave it to me back in 2005 and I have it on my hard disc and in my recipe book!

She gave it to me after a request for a no cook, no fail cheescake. This followed a period of several months making cooked ones that all went disastrously wrong.

So here it is, in her own words from 2005, if I dare!

Tipex?s Cheesecake

Yummy and quite tangy: there is nothing to sink, its dead easy

2oz butter
7oz ginger biscuits crushed
410g can condensed milk
227g pack creamery soft cheese (eg philadelphia)
grated rind (optional) and juice of 1 lemon and 1 lime
5 floz double cream, whipped

combine butter and biscuits and 2 tablespoons of the condensed milk, press into 8 inch tin and let set
beat the cheese in a bowl until soft then gradually beat in the rest of condensed milk, lime and lemon juice (plus rind if using). leave until it thickens then fold in the cream. pur in tin. put in fridge and let it set.

SRM - I know you posted this recipe a while ago but have only recently gotten around to making it - and I have to agree it is delicious, dead easy to make and didn't last very long in our house! I've also made a strawberry one in the same way with lots of sliced strawberries covering the top which was equally nice.
