Made a huge pan of cream of parsnip soup today

The parsnips only cost 30p!! They were reduced in asda but nothing wrong? The pan was huge so I froze some and there's some in the fridge. I've already had 3 bowls, dp 1 huge bowl and dss a bowl each. I used 3 onions from a budget bag, 2 stock cubes, stock from a chicken we had the other day and a bit of milk. Bargain!

Personally, I would just sweat the onions for five minutes in a bit of butter, then add the stock and chopped up parsnips. Bring to boil and simmer until the parsnips are soft. Then blitzas much as you want.

You can pretty much use that recipe for any veg soup you like.

Glad someone helped I'd gone to bed

This is the one I did it's very basic and doesn't tell you how to prepare the veg but I just cut onions into 8 and peeled and chopped parsnips into chunks. Took minutes to do.
