Anyone have a recipe for lamb casserole/stew with apricots?

do a google search under lamb tagine apricots recipes and you will get loads...

Do you think you could do that JO recipe without hte cumin and coriander? Oh and minus the chilli? DD hates chilli and dh won't have it either as it exacerbates arthritis; I loathe the other two.

Not sure that you will really taste the cumin and coriander that much and they do add the authentic flavour. But if it will spoil it for you, I would chuck in some other herbs/spices to compensate. I used bog standard mixed herbs if not sure what to use,but would add rosemary with lamb otherwise.

When I have a glut of apricots, I add them to curry.

So lamb, zuchini, capsicum, onion, apricots....fry lightly, add fave curry paste/powder, fry til fragrant, add can of cococut milk. Simmer til tender.

So delish...I think it is cos the apricots make it all thick and sweet.
