Inspire me about the meals you cook and freeze

I am currently re-stocking our freezer with home made ready meals for when DC2 arrives so I'm looking for some inspiration for meal ideas for myself DH and DD.

I have endless mince type meals ie spag bol, chilli, cottage pie which are great but I really want some variety.

Please tell me your fail safe freezer meals which everyone enjoys.

Fish pie is a good one - freeze it without the potato on top.

Curry too. I cook th onion, meat and veg in the marinade then freeze it. Once it's defrosted I then add the yoghurt.

I'll be following this looking for more ideas!

i make a (if i may say so myself!) rg=ather nice sausage and onion casserole. its a nigel slater recipe. let me know if you m=want me to put on recipe.

I freeze cheese sauce to use with pasta (add some ham and broccoli) or make cauliflower cheese with.

Home made pizzas

pies - chicken and leek, steak and onion, steak and kidney (make filling and then just put frozen pastry over the top)

I also had a selection of chops/chicken pieces/sausages etc for when ds was born so we could have something simple, just add a few veg.

Fish in breadcrumbs

A selection of things to add to stir fry, just buy a bag of pre-prepared veg and add prawns/strips of beef/diced chicken etc

Anything 'stewy' from the slow cooker - cook huge portions, eat some, freeze some.

Home-made soup is great too - just add some half-baked bread to make it a yummy meal

lamb stew is nice. boil stewing lamb for an hour, add salt and pepper and skim off the scum. then add some scotch broth and dumplings. it's fattening though.

I freeze portions of stewy stuff too - beef in beer v popular here, as is cottage/shepherds pie, curry too, and meatballs in tom sauce. Home made pies and pasties too.

In fact I just make large quantities of most things and freeze portions for emergencies or when I know I'll be late home or DH will be late and eating on his own.

Thanks everyone they sound great. Don't know why I didn't think of fish pie and curry to be honest, I've done that before! I've made some thai curry (al la Jamie Oliver) today and frozen half of that. With all these great ideas now all I need is a bigger freezer!

Can I ask - if you cook double of a casserole in a slow cooker, how do you go about reheating and serving the frozen potion at a later date? I've thought about doing this on many an occasion but am worried about giving us all food poisoning.

kahara, i may be wrong but I think it's just a case of making sure that frozen portion is thoroughly defrosted and reheated well before serving.
