Celeriac and leek soup

I have 2 heads of celeriac and I fancy making a 'mock' potato and leek soup. Any suggestions?

Celeriac soup is lovely. Just soften onions, add chopped celeriac, then chicken or veg stock. I usually puree and add cream at the end. You could add potatoes to bulk it out, I'd do about 1/2 as much spuds as celeriac.

Cheers, I'm making it now! I softened leeks and onions I'm just about to add pureed celeriac so I will report later with the verdict.
Thanks for that. I wasn't sure about celeriac in soup so I think I'm maybe onto a winner here now!

Celariac is great in soup. Always use it in my veg soup. Not sure what else to do with it though?

Well I can report that it makes real fine soup!
The recipe turned out to be;

2 heads celeriac,
4 leeks,
4 small onoins,
veg stock,
1 200ml tub creme fresh,
seasoning, teaspoon of powdered mustard, celery seeds, parsley and bay leaves.

I softened the leeks and onion ( I use the microwave as I prefer it fat free), added stock to simmer.
Cooked the celeriac (again microwaved) before adding 1/2 the leek/onion stock and pureeing. Add puree to the pan with the rest of the onion/leek and tub of creme fresh.
(I also added 4 medallions of Aunt Bessies mashed potato)

I had some for lunch with crusty bread and the rest has gone into the freezer for taking to work during the week.
One of the best soups I ever made!

including the creme fresh I think 8 large lunches will have cost about £4.50 including bread.
