I've got leek, mushrooms and blue stilton. I want to turn them into a pasta sauce. How?

Chop leek and mushrooms, stick them in frying pan, fry, crumble blue cheese and add some cream/creme fraiche. Black pepper. Mustard?

OK, I'm not delia. That's wht I'd do, but I have no idea if it would be nice!

Yup, cream is a must IMHO!

I'd soften the mushrooms, leek and a wee bit of garlic in some butter, then add the cream and melt in the stilton. As for seasoning a bit of pepper should be all you need.

I'd fry the leek and mushrooms in butter, stir in a tablespoon of flour, then add some milk to make a sauce. Then add the cheese to that.

Hmmm, sounds better than what I'd planned for my tea!

almost exactly what Wimbleberry said, but I'd also add the pasta at that point and brown it a bit in the oven. Like a bakey thing.

Oh, just thought- I'd slug a bit of white wine into the mixture at the butter point as well....

White wine sounds nice. You could use white wine and stock instead of the milk.
And you'll have a bottle of wine open ready for a glass with your meal!

I do a leek, mushroom, cream and white wine sauce similar to Norktastic's.

I'd leave out the blue cheese though! (that goes well with spinach imo)

Loads of good ideas, thanks. I've decided to hold out until tomorrow and get some cream, so I'll have a go at this tomorrow night.
