HELP! Need frugal meal plans-inspiration please!

i am vegetarian, have 2.6 ds who is allergice to dairy, soya and egg. I have a dh who isnt fussy and an 11 week old with bad reflux to look after so dont get alot of time to plan meals.

ok i know these sort of threads are done to death but i cant ever find things that i can cook that we can ALL eat that is HEALTHY and QUICK!! It would be handy to say have a roast chicken sunday and use the meal in something monday,,, that kind of thing. i eat quorn and soya mince so would have to do 2 meals anyway (or that meat can be added at the end)

doind food shop tonigh ladies, please help! I waste alot of food as i either forget it (I SO MEAL PLAN PROMISE) or im having a bad time wtih ds2 so dont have time to prepare a say half hour meal....

we need new ideas as just tend to eat the same things..

falafels/hummus/pitta
veg tacos
quorn mince
tofu stir fry
dhal with nan
potato latkes/salad
baked potatoes with beans
roast veg with garlic/rosemary
veg lasagne (with rice dream)

passata
tin tuna
onion
pasta

Fry onion in oil. Add passata. Season. Add tuna. cook down for a while. Add cooked pasta.

Done.

baked potatoes are something i do a lot
you can have anything you like with them

mnestrone soup
veg curry - can be as mild as you like for ds
fishcakes - jsut fish, mashed pots and herbs
bked salmon - wrap salmon in tin foil with a slice of lemon and bake in oven fo 20 mins
add a spoon of pesto if you like
nice with green beans
samosas - basically mince, veg wrapped in filo pastry

what are potatoe latkes??? do you have a nice dahl recipe? Is it spicy?

salmon in oven as we speak! And green beans!! Althoug im doing roast potaotes with them

ds1 cant eat mashed pots though coz he has awful gag reflex as he also had severe reflux!

ahhhh just forgot why we dont eat fish apart from ds1 as dh hates fish!

dh is an adult
if he doesnt want to eat waht you cook get him to meal plan instead

savoury rice is just rice with herbs, peas, carrots, sweetcorn, basically anyting you like

I am going to try this recipe later - can't vouch for it yet but i reckon it will be fab.(made trad. meat version last week and it wa yum so have been wondering how to adapt it for vegetarian brother and this is what I have come up with)

Vegetarian Stovies.

In a large casserole dish or stockpot, saute 2 minced cloves garlic, a small finely chopped onion and 2 finely sliced sticks of celery for five minutes in olive oil.

Add in 1lb (large bag) of veggie mince and two large onions chopped roughly. Stir in for 2 mins to coat mince.

Add in loads of potatoes - I mean loads, a whole bagful. They should be peeled and sliced in varying widths so that you have half very thin slices, and half nice thick quarter inch discs. Add in enough veggie stock (I use kallo as it is v. tasty) to cover the mixture. Simmer until biggest potato slices are soft and the very thin ones have broken down compltely in the stock to make a nice thick gravy. Eat with brown sauce (optional and oatcakes for dipping.

You can add whatever other seasoning to zhuzz it up s you are cooking - veggie worcestershire sauce if you have it is good, perhaps a sprinkle of mixed dried herbs.

I try to leave it for an hour to simmer to let flavour develop but 15 mins would do it.

Soups are great. Frugal, vegetarian, and tasty

Start with an onion (not necessarily finely chopped, you will mix everything later anyway). Stir in maybe 2 tablespoons of olive oil. Add 1 potato, 2 carrots, and about a small water glass full of red lentils. Add a bit of water. Cook until carrots are soft. Mix it in blender. Voila!

Again, start with an onion. Add 2 broccolis, 2 courgettes, 2 carrots. Add water, mix when cooked. Another voila!

Once you get the hang of making soups, you can invent one with whatever you have in the house.

lentil bolognese - and can also use this sauce in a lentil lasagne

tin green lentils
tin tomatoes
tomato puree
chopped onion
crushed garlic
herbs of choice

just make up a tomato sauce as you usually would and then add the lentils. It's really hearty and my boys (4yrs and 18mths) love it!
I know your ds has an egg allaergy but for anyone in your family who can eat egg, green lentils heated up, drained and spooned on top of scrambled egg on toast is a really cheap, easy meal too. Can you tell I like green lentils??!!
