My best so far are
Nigella's clementine cake
Nigella's almond & orange blossom cake
Mary Berry's family fruit cake

All for 'maturing' rather than freezing

More to add to my repertoire gratefully received

I find that chocolate sponge of any sort freezes well - I always make ahead for DDs birthday cake, then get out and ice the day before party.

The Dinner Lady's Gingerbread recipe 'matures' after a day or two and keeps for a week or so. Were you thinking longer than this?

I have heard that LDC freees well but not tried it myself yet.
