spicy red lentil.

onion
carrot
celery

fry til soft, add some curry powder,cumin coriander.

add red lentils

stock and a bit of passata or tom puree.

blitz.

bloomin' lovely, it has a real velvety texture and is warming and soothing, as a good soup should be!!

I made a lovely "aromatic parsnip" soup the other week. Basically parsnips, apple and some mild spices.

have loads but made a lovely pan of carrot and lentil a few days ago. Also recently made zucchini and potato soup for the first time and it was lovely

Carrot, Squash, Onion, Ginger, Garlic, S&P, Water/Stock.

We call it orange soup, but that's a bit misleading...

butternut squash, sweet potato and red lentil

i buy ready prepped squash and potato, simmer in water, then add couple of handfuls of lentils, cook then blend

and roast 4 or 5 large red peppers until slightly charred, then blend with some fat cloves of garlic, add a tin or two of plum toms and blend. nice hot or cold

Heat veg oil in pan
add:
sweetcorn
chopped red chillis, red onion, spring onions, red pepper
lemongrass
cook for a few minutes
add about a pint each of coconut milk and veg stock
bring to the boil, then simmer for about 15 mins.
add noodles, cook for 4 mins
stir in juice of 1 lime and a handful of chopped coriander

Carrot soup

Bag of carrots sliced into decent sized discs
Good lump of butter
1 onion finly chopped
Pint and half of chicken stock

Melt butter, add carrots and onion and splash of stock
Sweat for 15mins adding more stock as required
Add rest of stock and simmer for 5 mins or until carrots are cooked
Leave to cool slightly
Whizz up in a blender til smooth
Season to taste

Carrot potage from Cranks - has sage and thyme in it, and tastes divine.

Carrots, onion, potato, marigold stock powder, water, dried sage and dried thyme. Lovely.
