Dd has always liked it with a little butter, laid on a couple of slices of lemon and simply baked in foil.

I just poach it in some milk, remove the bones once cooked and then mix in with mashed potato. I also use the milk in the mash.

Ooh that sounds nice!

is it trout steak? if so i usually bake it in foil with olive oil and herbs and serve with new potatoes and veg. dd1 (2.5) loves it and it is no effort .

fishcakes?

georgiemum · 05/02/2009 13:59

Not sure. I am trying to use up what it in the freezer before it becomes impossible to close the door! I think it's a fillet (it's a frozen little ball of something just now!)

Thai/Chinese -ish fishcakes - skin and bone the trout, chop in medium roughly in a blender. Make a paste in a blender with (say) ginger, a bit of a green chilli, lemongrass, shallots, lime juice, thai fish sauce and coriander OR ginger, chilli, soy sauce, garlic, maybe a little dash of honey. Form into balls and chill. Fry for a couple of minutes each side. Serve with rice, noodles and stir-fried veg. These freeze well, too.

Hmm. Should have previewed that! Mix fish and paste together (and a splash of sesame oil is nice in the soy sauce one), then form into balls, etc.
