freeze half of it (for the end of the week) and use the rest over the next day or two. Keep in fridge, take out what you need (I'm imagining a complete keg full of the stuff ), make sure it's piping hot before you eat it.
Defrost the rest when you need to so no risk of it going off.

This is always a dilemma for me. I read in the Times the following info. Heat up the soup for 15 mins and it will kill any bugs. But I don't know if they meant every day or what! That seems a bit of a faff. Have you got a freezer? If so get containers that hold two large bowl full & a bit more.LABEL IT! Don't use soup bags I've made a right old mess with them Freeze half and make a promise to eat it every lunchtime. We are big soup eaters in our house. It normally goes like this eat straight away about three bowls. Freeze half forget to put labels and throw away in about three months time. Or make a large batch and not fancy it at all we later throw the whole thing away. My Mum cook it and we eat it all up!Everyday! I think I need some help too!

I make a different soup most weeks, i always freeze whatever i don't use straight away.

I freeze them in individual portions and i almost always have a soup to choose from everyday.
