Cumin, Cinnamon and Ground Corriander.
Google a lamb tagine recipe - very easy and incredibly tasty! Re veg I would use onio, carrot, olives, fresh mint, hmmm whatever really.
If you look at a few tagine recipes you'll see how flexible they are once you get the spices together as the base flavour.
Mmmm I'm going to the supermarket now to get tagine ingredients!

Oh and just cook it like a casserole in the oven, no need for actual tagine, although that looks v impessive if you have one!

cover lamb in yoghurt mixed with lots of coriander and some garlic (all ground up together) stick in oven directly on shelf (no tray). Put chopped carrots, chickpeas, butternut squash in oven covered in olive oil and ground cumin. Stick in oven under lamb to cath the drops from the yogurt marinade. Serve with cous cous.

This is the only thing I ever cook for dinner parties (I have to make sure I don't invite the same people twice!!)
