veggie somosa's for kids - recipe please!

Also I have ended up with spring roll pastry to make them, as I couldn't find somosa pastry, does anyone know where you can get it, or is it easy to make?

I used a recipe not long ago using filo pastry and then you oven baked them. The dc loved them!

Here it is - it is for sweet potato samosas. I found it on a free brochure from Tesco and have just found it on their website.

I like the sound of the tesco thing of boiling the potaotes in some curry paste and water.
I have just made mine, I just fried some spring onions, carrots and potatoes with garam masala and turmeric and a chopped tomato.

the spring roll pastry is brilliant, so much easier to work with than filo....we haven't tasted them yet though. they are in the oven

I found the filo pastry really fiddly - shall look out for spring roll pastry in future
