does this amount of stock sound correct to you (for carrot soup)?

It's a BBC Good Food recipe so i probably shoudn't doubt it but I've used 800 g of carrots and one onion and it's saying to add 2 litres of stock???

It sounds a lot to me.

Think that sound right, as carrots have quite a bit of fibre.

sounds a lot too me, too - why not add it gradually and see if it needs it? Nothing worse than watery soup.

I made it with 1 and a half. I think 2 would have been fine but I do like mine on the thicker side. It was only carrots, onion and stock with 1 tsp honey and bay leave - it tastes delicious! Why am I always surprised when homemade veg soups turn out so well?? I really should make them more often!
