Apple Pie recipe for a 23cm pie dish please!

I am after a fairly bog-standard recipe really.... Also going to use shop-bought pastry due to time constaints, so a bit unsure of the quantity I will need for this dish.

Also have found cooking apples go a bit 'fluffy' and disintegrate when I've used them in other things, can anyone suggest an alternative variety that keeps its shape a wee bit better?

Here is what I do with apples, cooking or eating (if they need using up).

Quarter the apples, take out core and peel.

Slice each quarter into quite sizeable chunks.

Melt a big knob of butter in a frying pan, add apples, mixed spice and some demerara sugar - have the heat on relatively low.

The apples will cook but still stay whole pieces, transfer to your pie tin.

I usually make pastry and would use 12oz flour and 6oz butter/marg.

If you are using shop bought, I would think there should be enough in the packet for a top and a bottom for that size tin.
