Gordon Ramsays recipe for lasagne adds milk to the bolognaise sauce - why?

I like this recipe, using grated carrot and am using it tonight for a spag bol, but wondered what the milk does to the bolognaise?

I believe it's meant to tenderise the meat. Not that I've ever found minced meat needed it, but I read it in another recipe once.

I always add loads of milk to bolognese sauce.

thank you , i don't think thsi recipe needs it, the grated carrot really seems to help tenderise the meat anyway.
