When I make it I use the Thai Taste, Red Thai Curry Paste (Gang Ped) which is in the special selection in Sainsbury's, although I have seen it in Tesco's too.
All you do is heat the pan, add a couple of tbsp of the paste, stir it around then add a tin of coconut milk and some stock. I either add some chicken to cook in the sauce, with a stalk of lemongrass, or some veg. It really is lovely, and nice and spicy!!
