I've never managed a fool proof scone recipe... one that gives you nice fat scones that are light, don't get stale immediately, and have a good texture! Pass it over if you have one

TIA

Nigella, who credits them to her friend Lily - i do half the recipe
500g plain flour
1 tsp salt
2 tsp bicarb
4.5 tsp cream of tartar (CRUCIAL)
50g cold butter
25g trex (butter if you can't stand the idea)
300ml milk
1 egg for egg wash

Oven 220c /gas 7

sift together the dry stuff. rub in the fats, add the milk. mix BRIEFLY. Roll out really thick 3cm/ a good inch.

properly, 6.5cm crinkle cutter. Paint with egg wash.

cook for about 10 mins

Yum yum. If I had some cream I'd be making them right now.

If you have a 3 day old baby to makes as follows.

  1. You sit a rest.
  1. send dh to buy scones.
  1. when inlaws arrive you sit on your bum and DH makes tea and scones.
  1. You sit and dh clears up.
