Easy recipe for homemade cookies (preferably dairy and soya free)

Does anyone have an easy recipe for delicious, chewy, melt in your mouth cookies that are easy to make and possibly dairy and soya free so we can all enjoy them. Oh and did I mention it should be easy. Thanks

I like this one. Easy and comes out well - be careful not to overcook them.

I guess they're not really melt-in-your-mouth though - the melty biscuits, I think, are generally high in saturated fat = dairy or soya.

These Anzac Biscuits are quite light.

85g Oats
85g dessicated coconut
100g plain flour
100g caster sugar
100g Pure Sunflower Spread (or butter for those that can use it)
1 tblsp golden syrup
1 tsp bicarb of soda

Put oats, coconut, flour and sugar in a bowl and mix.
Melt the spread (or butter) in a bowl/pan and stir in the syrup.
Add bicarb to 2 tbsp water then stir into syrup/spread mixture.
Make well in dry ingredients and add syrup mixture. Stir till combined.
Put spoonfuls on greased baking sheet. Bake for 8-10 mins in oven (180/160fan/gas4)

My dd cant have dairy or egg etc so I use these alot.
