Duck legs been in the freezer since July 2007

Still OK to eat? Or wouldn't you chance it.

As long as they're been kept at -18C (as in- proper deep-freeze) and the freezer hasn't defrosted since then I wouldn't see a problem with them.

My fil has been eating pheasants that have been in his about 6 yrs

Well, when the weather got really cold we had problems and it did go above that (went to -6) but other food has been eaten since then and it has been fine.

Might be a bit dry but I would eat it...
See what it looks like once defrosted and cook it well.

I would think they'd be fine. They didn't spend long at -6 I take it? The worst that's likely to happen is that they'll be a little freezer-burned, so casseroling them might be a good idea.

I think meat is ok - fish, however, begins to degrade after about 2 months in the freezer.
