I need a recipe for tomatoe rosotto please.....

I have heard that you can throw any left over veg into your risotto. I have got courgette ad aubergine and peppers, would they go well with tomatoe risotto?

And what else will I need. I have never made risotto before but have got some of that type of rice in....

Never heard of a tomato risotto . I it would just turn into a slush-cum-sauce. Risotto itself is easy . I use stock and wine as the liquid , chopped onions as a based then the rice and then parmesan cheese.
Typicaly things to add ae leeks , peas, mushrooms

the risotto rice takes about 20 mins to cook. All of these will go well. If you want to be fancy you could roast them first.

Basically you chop an onion and fry for five mins, then add the risotto rice until it is coated with oil, then add boiling stock a ladle at a time until the rice is cooked (about 20 mins). You can either roast your courgette, aubergines and tomatoes, and add them about five mins before the end, or cook them in with the rice from the beginning. It will be much more flavoursome if you roast them.

I have bought a microwave version of tomatoe risotto in the past, it was tomatoe flavour but did not have real tomatoes in it...

mrscurly - i think I would just throw them in at the start as will be easier and less calories...

how small will I have to chop the veg?

Wobbly pig is right, it will go mushy. And technically you should salt the aubergine first. But life is too short.
