Mushroom risotto recipe is saying madeira but I need a non alcoholic alternative please.

What about apple juice? I'm sure I have a mushroom risotto recipe for children that uses it.

I just omit it usually and use a bit more stock.

Or how about getting some of those dried mushrooms to use in it, which you have to pour hot water over - you could then strain the mushrooms and use the mushroom -infused water.

porcini mushrooms - they can make it a bit strong but very tasty - and extra veg stock. We never put madeira in our mushroom risotto, or other alcohol for that matter.

For the flavour, you could grate in some orange/lemon peel mmmmmm! It'll lift it a little.

I may have missed somehting but I thought all the actual alcohol evaporates off very quickly from any wine etc added to cooking, if it reaches simmering point. Hence the reason why mulled wine should not be allowed to reach simmering point.

Any other liquid will do but the alcohol will boil off. I use a glass of vermouth or white wine in my risottos, even when the DCs will eat it.

Sorry - have just been off to google and the alcohol issue clearly isn't as straightforward as I thought!

Anyhoo, have you thought about mushroom krtchup? Ihis is not actually ketchup, by the way, more of a mushroom flavoured soy sauce. I know Sainsbury's do it. Delia has a fabby mushroom soup recipe that uses it.

You can put a bit of apple juice with a (very small)splash of vinegar in it.
