Have got a big bag of frozen forest fruits in the freezer and a toddler who won't eat fruit. But will eat fruit bars / flapjacks. ANyone got a easy recipe for flapjacks / fruit bar type thing that I can put frozen berries in?

I would use a normal recipe but put half the mix in the tin, then layer it with the defrosted fruit and put the rest of the flapjack mix over the top then bake at a slightly lower temp for a bit longer. I've done it with apples. It made the base a bit more wet and cake like so better to leave a day or so in the fridge to firm up.

I did a 2 egg sponge cake the other day and shoved loads of defrosted raspberries and strawberries on the top. It took about 50-60 mins to cook, the fruit kind of made its way through the cake and it was delicious

thanks badkitten. How long do the flapjacks last once they've been cooked and left in the fridge for a day?

I'm comfy with 4-5 days in the fridge

Cool, thanks, will give them a bash! ANything to get more fruit into DS1! Do you think I could blitz the defrosted fruit first so that he is even less likely to object?

I reckon that would be fine (hope it works out now!)
