Fresh Tomato Soup or Roasted Red Pepper Soup?

Hi,

I buy my fruit & veg through my husbands work as I get a good discount.

As I now know the lady quite well she puts in veg each week that is not good enough to sell but great to make soups with.

This week I have tomatoes, basil and red peppers.

Any easy soup recipes please?

Roast the tomatoes with olive oil and some garlic, crush a bit when nicely cooked and stir through pasta. I've done this a few times when packs of tomatoes on the vine have gone a bit squishy - too soft to eat as salad tomatoes but great roasted.

You could roast the red peppers at the same time - I cut them up into chunks and deseed them first - I think it saves turning the peppers round and round to make them cook evenly. Then blitz them with some tinned tomatoes or passata and the basil - warm through and eat with fresh crusty bread - yummy!

Or just roast the peppers and eat them as a starter with a drizzle of olive oil and a sprinkle of seasalt.

Right - I am off to get my lunch now - this thread has made me hungry!!
