I need some meal ideas, I will have very limited cooking equipment for the next couple of months.

All my stuff has been picked up, ready to be shipped to NZ. I'll be here for nearly 3 weeks and then I'm going to try and just wait for my stuff to arrive, I don't want to buy anything new. SO, for the next couple of months I have...

one small saucepan with lid
one shallow baking dish
knife
spoon
two small bowls, oven safe
tin opener, veg peeler, small grater, sieve.
no chopping board, which is driving me mad. I put it in the wrong cupboard and it got packed.

Any brilliant ideas? ds thinks we should have tomato soup for every meal but I'm not so sure.

Have you got a proper cooker? Or a microwave?

cauliflower cheese (using packet sauce if necessary).

easy enough to do in one dish, and can add ham/frankfurters/ready cooked meats from deli as desired

I would def buy another chooping board though would drive me nuts!

you could have lots of soups: leek & potato/tomato/veg/chicken & whatever else you've got to hand etc.
Also stews, pasta & sauces, macaroni cheese, baked bolognese?any good?

Couldn't do without a chopping board, so I'd go and buy another one pdq!

Pasta/veg bakes sound the way to go boil up your pasta/veg as necessary first, tip into your baking dish and then make a sauce to go over the top.

bbc good food has a great recipe for an oven baked green curry (if your ds would tolerate) - really quite easy, and uses 2 pots (one for the browning of meat/veg, thn one in the oven)

meant to say that I do a like-macaroni cheese for ds which is all in one pot: cooked pasta, then take out and drain, add double cream, grated parmesan, peas and ham to pot and cook, then stir in pasta. It really is lovely!

Couscous - do it in the baking dish (just pour boiling water over and leave) while cooking some kind of accompaniment in the saucepan.

cheesy rice and peas also good:

chop onion and fry up, then add rice to pan, and coat in remaining oil/butter. add water/stock 9for added taste) bit by bit and stir while rice cooks. add frozen peas (assuming fridge/freezer facilities?) after 5 mins.

then grate cheese in before the end and keep stirring.

can also add ham/chicken etc

(can you tell we had extensive building work done, and had to use a combi microwave/oven plus single camping gas ring for 4 months?!)

oh, definitely couscous.

Ella's kitchen have started to do some sauces in pouches (you know, the ones that look like fruit smoothies) - they do a very nice curry one, and the american one is not too bad either (pumpkin based, i think)

so, any way - rice/pasta/couscous plus sauce with the inevitable ham/sausages/chicken.

Frozen veg always brilliant as you can add it to the pasta/rice while cooking, so use only one pan.

ella's kitchen sauces here. have got them in Sainsburys, and I think, sometimes in Waitrose too.
