what do you put in stuffed peppers?

Just curious as I'm going to try & do some for us next week sometime but not sure what to put in them

sorry for delay lucysmam, recipe is as follows:

Fry some chopped onion, garlic, ground cumin, ground coriander and cayenne powder in a bit of oil till the onions are translucent. Add a chopped tomato, some sweetcorn and a bit of salt, and simmer till the corn is just cooked.

Beat an egg (or two, depending on how many peppers you're stuffing - I find one is enough for four pepper halves) and then mix with some grated cheddar, some milk and some chopped green olives. Then mix in the fried vegetables.

Cut the peppers in half lengthways and deseed, but keep the stalk as it helps them to hold their shape. Stuff the halves with the egg-veg mix and put into a baking tray. Pour a little water into the bottom of the tray, cover tightly with foil and bake at around 180 for 30 minutes, then 10 minutes more with the cover off.

Delicious! I might make these tonight actually.

no problem, thanks very much. I picked up some peppers this evening at the shop in anticipation of trying some tonight so will try them as I have everything I need to make them
